Seven of Toronto’s best cheesecakes

These are not your grandmother’s cheesecakes! While most of us are used to solid pieces of cream cheese based cheesecake on a graham cracker crust, some of Toronto’s chefs are thinking outside the springform.
Seven chefs across the city have reimagined cheesecake and are using unusual ingredients including meringues, granola, sunflower seeds and pop rocks in their creations. Pictured, Brassai’s cinnamon and sugar–poached apples offset a luxe slab of goat cheese semi-sweetly flavoured with puréed beets and perched on a dense walnut crust.
